"God may send a man good meate but the dvyll sende an evyll cooke. Wherefore gentyll bakers sophysticate not your breade made of fine wheat. Gentyll bakers make good breade   for good doth comfort a mannes herte. Hote breade is unholesome for any man for it doth lye in the stomache like a sponge   yet the smell of newe breade is comfortable to the heade and herte. Sodon breade and breade baken upon a stone or yron is not laudable. Burnt breade and harde crusts and pastry crusts doth ingendre melocoly humours." (circa 1400)
