Wherefore dyp the upper crust of your breade and whoso doth use to cate the second cryste after the meate it maketh a man leane. Breade which is nututyne and praysed should have these properties. Fyrst it must not be newe but a daye and a nyght olde. Nor is it good past four or five days olde (except the loaves be great). It must be well muldyd and thorowe bake it must be lyght and not hevye and temporately salted. (1400)
