A fourteenth-century friar, on the difference between black and white pepper:

“Pepper ripens in the heat of the sun and serpents defend the woods where it grows; to pick it, the trees are set on fire [to drive away the serpents] and the pepper becomes black.”

White pepper therefore comes from places without snakes…
