Aquapatys

Welcome to another segment of Goutte HouseKeeping by Wulfric of Creigull (also known as the Mad Baker).

One of my favorite recipes from Jingles is "Aquapatys". This recipe isfrom Curye on Inglisch, a compilation of 14th century English recipes. The original reads:

Pill garlec and cast it in a pot with water and oile and seeth it. Do therto safron, salt, and powdor-fort and dresse it forth hool.

I interpreted this as:

1/2 cup water, 16 cloves peeled garlic, 1 T oil, pinch saffron, pinch powder fort (a mixture of cloves, mace, cinnamon, ginger, and pepper).

Boil water. Add cloves, oil, spices. Cover and cook over medium heat for 5-7 minutes, until garlic is easily pierced with a fork. Drain and garnish with parsley.

Of course, not everyone is as much of a garlic fiend as I am, but this recipe produces a very mild-tasting cooked garlic clove.
